Making Loukoumi (Turkish Delight) In Cyprus

Cyprus may be a divided country, but everyone seems to enjoy the same desert, the sweet, soft cubes known as Turkish Delight. On the Greek side of the island, it's called loukoumi. No matter, the ingredients are consistent and the method of production passed down through the generations.

Tempting.


First, the sweet base is mixed, heated in a big pot and melted into a gooey gel. 

Next, scraping out of the pot and pouring into wood tray molds.

An overnight cool down to solidify the candy.


The next day, out of the tray, sprinkled with powdered sugar and chopped into cubes. Then boxed.

Gathering the bounty.


Packaged and ready to consume.
