Penang can be a hot, sweaty, oppressive city most of the year -- and being outside more than one has to during the daylight seems downright masochistic. Come nightfall, when the temp falls and the humidity dips, people emerge for some strolling and perhaps a meal at one of the many outside night markets.
Imagine a blah American mall food court transported outside and made interesting by unique vendors. The stalls surround an expanse of tables and folks are free to go grab whatever sates the palate. The combination of homemade food and the steamy night creates an atmosphere of subtle intrigue. Think Van Goh's "Night Cafe" or Marrakech's famous square, Jemaa el-Fnaa. Or just grab a Triscuit and enjoy the following photos.

Food is busy being steamed and roasted, whatever the hungry hordes are looking for.
A Rockette line of heavenly chickens. Squid, proudly displayed raw and whole, not a big crowd pleaser in the US. There's something to be said about seeing one's food in its real form, before the packaging men get to it.
Oh, don't forget preserved and fried food. Approved!
