Hack Job

No sterile foam trays and plastic wrap with bar codes for Nepal. If you want meat, go see the butcher. And if you go to the butcher, expect to watch them practice their namesake-butchering. It might be a hack job, but it's a skilled one and an impressive show.

Start with the butcher sign. The graphics tell you if you've come to the right place. The dogs can't read the sign, but they certainly can smell the signs. Waiting for a scrap, knowing its boundary.

It's nice to see the ladies handle a knife for a change.

Testing the limits of what to buy.
